MEDITERRANEO BRAND BALSAMIC VINEGARS

First created almost a thousand years ago, balsamic vinegar is prized throughout the world.  It is made from the pure and unfermented juice of  selected grapes. The juice is simmered in until it is reduced to 40% of its original weight. The resulting "must" is aged in a succession of small wooden barrels, often in a combination of oak, cherry, mulberry, chestnut and/or juniper, producing a complex and rich balance of flavors.  We offer original balsamic, as well as balsamic enhanced with a variety of flavors, in both 250 and 500 ml swing top bottles, as well as  Mini Bottles , which are great for wedding favors or tasters !!

Aged Fig Balsamic  "Il Fico Balsamico" This richly flavored condiment is created in Modena, Italy using Celeste figs and Trebiano grapes. It blends the mellow velvety richness of the finest balsamic vinegar with the rich sweet flavor of the figs.   It is aged in oak and chestnut casks for over 6 years to give the vinegar the thickness and spectacular flavor due to the natural evaporation. Use to enhance pan sauces, as a marinade or salad dressing. Barrel Aged Balsamic Vinegar Made in the traditional way in Modena with 100% Trebiano Grape and then aged over 6 years in chestnut barrels, this vinegar is rich brown in color and has a complex flavor that balances the natural sweet and sour elements.  You can use it to drizzle over Steak, Chicken & Pork, or you can use it as a glaze for grilling. Or, simply serve with Extra Virgin Olive Oil and your own choice of Italian herbs and dip to your heart's content.

Pomegranate Balsamic   Pomegranates have long been loved both for their flavor and health benefits. Slow steeped in our white Balsamic, they blend the sweetness of the pomegranate with the tartness of the vinegar. It adds depth to any sauce and is a perfect match for hearty meats like lamb and duck. Brush it on while grilling, drizzle it on fruit, or add a dash to spark up greens like chard or spinach. Sicilian Blood Orange Balsamic   This delightful blend of Sicilian blood oranges and trebiano grapes from Modena Italy will delight your palate. The sweet and savory flavor has tart and fruity citrus undertones. Use to dress a salad of mixed greens, segmented oranges, topped with slivered almonds.  Brush on grilled or roasted chicken or pork or simply enjoy with cheese and bread.

Passion Fruit Balsamic.  Tropical Passion fruit is blended with our white Balsamic and aged in wood barrels to create a refreshingly different vinegar, loaded with bright fruity flavor.  Brush on poultry or add to pan drippings when deglazing. Drizzle it over salmon before baking to add a Caribbean flair, or mix with olive oil for a zesty salad dressing for cole slaw or fruit. Pear D'Anjou Balsamic Pear Balsamic is perfect as dressing with seasonal fruits and vegetables, splashed into soup or added to your favorite pan sauces. Not too sweet, not too sour with just a hint of spice, it will enhance the flavor almost any salad, especially spinach or cabbage. Get adventurous and try drizzling on caramel or chocolate sauces with berries or ice cream.

White Balsamic from Modena. White Balsamic Vinegar is made from a different process than traditional balsamic vinegar. The grape "must" is not caramelized during processing, resulting in a golden color.  The smooth, well-balanced flavor is perfect to be used in a variety of recipes, from simple salads up to more elaborated dishes. White balsamic can also be used in sauces for meat or to deglaze a pan. It's ideal on fish and poultry because the color doesn't alter the color of the dish.
